About Carla Salcedo, RD, CDE
Carla Salcedo is a registered dietitian (RD) who counsels people on their eating habits to improve health and help treat diseases. She provides nutrition education and medical nutrition therapy.
Ms. Salcedo's expertise is in helping individuals with gastrointestinal disorders such as GERD (gastroesophageal reflux disease), inflammatory bowel disease (IBD), irritable bowel syndrome (IBS) celiac disease, non-celiac gluten sensitivity, and small intestinal bacterial overgrowth (SIBO). As a low FODMAP diet expert, she works with people with IBS to create eating plans that help reduce symptoms of the disease. Ms. Salcedo also provides diabetes management during pregnancy and throughout the lifespan.
She completed a bachelor's degree in food and nutrition from San Diego State University. Ms. Salcedo holds certification in Integrative and Functional Nutrition from the Academy of Nutrition and Dietetics and a certificate of training in Nutrition Focused Physical Examinations from the Abbott Nutrition Health Institute. She is also a certified diabetes educator (CDE).
She is a member of the UC San Diego Health Dietetic Internship Board of Directors and has served on the organizing committee for the Nutrition Focused Hands-On workshop. In addition, she's been a guest speaker at the San Diego State Univeristy Dietetic Internship workshop.
Outside of work, Ms. Salcedo enjoys reading, surfing, and stand up paddle boarding.
